What’s better tasting than a homemade warm muffin straight from the kitchen?
In our home we enjoy making this recipe with many different ingredients added in substitute for the blueberries. One of our favorites is substituting strawberries in and adding some chocolate chips to the mix.
Have fun with our recipe and don’t be afraid to step out of the mixing bowl and add your own spin to a great tasting muffin
Ingredients
1.5-2 Cups of wild blueberries (or desired fruit)
2 Cups flour
2/3 Cups sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla extract (the real stuff)
1 cup heavy cream or sour cream
1/4 cup milk
1/4 cup oil
1 egg
1 tsp. grated orange or lemon peel (optional)
Preparation
Step 1
Preheat oven to 400
Step 2
Mix dry ingredients into large bowl
Step 3
Mix wet ingredients plus egg into medium bowl (mix well)
Step 4
Add wet mix to dry mix and fold until mixed (thick & lumpy)
Step 5
Add Blueberries (or desired fruit)
Step 6
Spoon 2/3 full into pre greased muffin pan
Step 7
Top batter with a pinch of cinnamon and sugar
Step 8
Bake for 15-20 min (or until lightly brown on top
[Cool on racks for 20 min]
